This refreshing dressing has many flavors, such as mild sweetness and the punchy kick of ginger. It is sweetened with the sugar alternatives of mirin and malt syrup.
Ingredients
- 3 tbsp Mitoku Organic Mikawa Mirin
- 2 tbsp Mitoku Organic Sweet White Miso
- 2 tbsp Mitoku Sesame Oil
- 2 tbsp olive oil
- 3 tbsp Mitoku Organic Brown Rice Vinegar
- 1 tbsp Mitoku Organic Shoyu Soy Sauce
- 1 inch ginger, grated
- 1 tbsp lemon juice
- 1 tbsp sesame seeds, ground
- 200g broccoli, boiled and cut into bite size pieces
- 200g asparagus, boiled and cut into bite size pieces
- 50g broad beans, boiled
- 50g French beans, boiled and cut into bite size pieces
- Some walnuts, crushed
Preparation Method
- Heat the mirin in a pan to evaporate the alcohol, then leave to cool.
- Put the miso into a bowl then add the cooled mirin and mix well.
- Add the rest of the ingredients and mix well.
- Arrange all the vegetables on a plate and top with the crushed walnuts. Then pour over the dressing and serve.
