


Somen noodles are very thin Japanese noodles which are typically enjoyed as a refreshing meal in summer, served cold with a soy sauce based dipping sauce with toppings like green onions and ginger. They come in very handy as it cooks only 1–2 minutes to be ready.
Mitoku Organic Somen Noodles are known as Banshu somen made in the Banshu region of Hyogo Prefecture, where traditional hand-stretched somen noodle methods have been passed down for 600 years. Our somen noodles are made using high-protein strong wheat flour respecting the tradition so they have a characteristic smooth but firm texture.

Making
Since 1890, this manufacturer has been providing somen noodles, based on the foundation of traditional methods, quality taste and food safety. To ensure food safety, the organic somen noodles are certified FSSC22000 and HALAL.
The ingredients are simple, high-protein strong wheat flour, salt and water only. First, the somen dough is made, adjusting the amount of salt depending on the weather and humidity. Respecting hand-stretching methods, the are repeatedly rested and stretched to increase their strength and firmness. This traditional technique produces noodles that are less likely to become soggy when boiled, have a smoother texture, and firmer. -
How to use
The key to a good somen noodles is how you boil them. The boiling time is approximately 1 minute 30 seconds to 2 minutes. First bring a large pot of water to a boil and put the noodles separately. *One serving requires 1 litre of water for 2 bunches (100g). Once it boils again, adjust the heat to avoid boiling over. When the noodles are cooked, quickly transfer them to a sieve and rinse them in cold running water to cool them down. Somen noodles are so convenient as it only takes 1.5-2 minutes. You can enjoy the meal within few minutes with choice of toppings and your soup or sauce. It is also so versatile, it can be enjoyed hot in soup or stir fried and cold with dipping sauce. The most typical recipe for somen noodles is ‘Somen noodles on ice’, very popular summer dish in Japan.
