Tekka

Tekka is a traditional Japanese miso condiment made from slowly cooked root vegetables like burdock, carrot, and lotus root, along with Hatcho miso and sesame. It is cooked down for hours until the moisture evaporates, resulting in a dry, crumbly, and concentrated seasoning that is rich in flavor and said to be high in natural iron. It can be used as a garnish to add umami flavor to dishes like rice, grains, and salads, or more.
