We value Japan’s tradition
Our producers are dedicated to preserving traditional tastes, recipes, and production methods. They are small-scale, long-established family businesses that we have carefully sought out and selected over the years. Many of our products has been a part of Japan’s cultural heritage for centuries. One of our signature products, Hatcho Miso, is naturally fermented for two years in 200-year-old cedar wood kegs under the pressure of three tons of river rocks. This time-honored recipe and preparation method have remained unchanged since 1645.

Mitoku products cannot be made without nature’s blessing. We carefully select ingredients and products that are grown, fermented, and matured in close harmony with the natural environment; for instance, making use of naturally occurring microorganisms in the fermentation process. Our producers work in harmony with the seasons to craft products that are naturally delicious.

For this reason, we take an active role in production, carefully sourcing raw ingredients and conducting thorough checks to ensure traceability from origin to distribution. In addition to supplying food products with organic and kosher certifications, we encourage our producers to implement a systematic approach to controlling food quality and safety management, including the implementation of GFSI-benchmarked standards such as FSSC 22000 and JFS-C.
